Lavender..give it a chance. Ours started out really slow, and right now, we're between bean pickings. When we're ready to pick again, DH will pull up the bean bushes and we'll pick the beans off then toss the bushes back into the garden to be tilled under later.

Our tomatoes are realllly slow. We found some more jars of green tomatoes, so I won't be canning any green ones this year. That leaves more for tomato juice or spaghetti sauce.

Queeny, if I can get my hands on some peaches, I'm going to attempt to do some pickled peaches. Dad used to make the BEST pickled peaches. I've never made homemade applesauce, but I do have a good recipe for homemade apple pie filling. I need to make some more. I'm down to 1 or 2 jars. We love applebutter, too...so if I can get enough apples, I may attempt some applebutter, too. Most you find is too runny. We like it kind of thick.

Oh.....yummmmm, Apple butter! Nectar of the Gods if you ask me...love that stuff! emoticon
I wish you luck canning....I hope your leg does not give you to much trouble...if you find that standing causes more problems....maybe pull in a chair or comfortable step stool (add a pillow if you have to) to sit on while between batches or waiting for stuff to "do their thing!" emoticon

Queeny, usually I'm moving around pretty much when I can, so sitting isn't an option until I get things into the canner, either for hot water bath or in the pressure canner.....and then, I come into the livingroom where it's cooler, or if it's cooler out under the tree, I'll go outside..just keep an eye on things and time. DH usually helps, so it goes faster than if I had to do it all on my own. One of our favorite things to make is our tomato juice. It tastes a lot like V8, but better!!! Each of us can drink a pint jar in a matter of minutes. I need to bring some up from the basement and put it in the fridge.
We've got corn about ready to pick. I think we'll take some from previous year(s), cut it off the cob and use it to make some corn relish and maybe some pickled corn. I love getting creative with the canning, so there's no telling what will end up coming out of my kitchen LOL

Apple butter is like a really thick applesauce, but it's used more as a jelly or preserve, and it's not got the graininess to it that applesauce has. It's awesome on hot buttered biscuits..

that is a recipe for apple butter. We like a lot of the spices in ours. A bit more than most use. This is a pretty basic recipe.

I was going to attempt making some from the apples on our apple trees here, but for all the apple blossoms, I think we ended up with 3 apples from all 3 trees! Not sure what happened. Guess I'm gonna have to go to the orchard!!!

 Pumpkin butter is yummy too oh heck All fruit butters are good!!
 My beans are still crappy but there is blooms so I will get a few HA!!
 My maters are surprisingly coming along.
 Same with the peppers.

Lavender...keep the hope goin! It took our garden a bit to get going...now I wish it would slow down!!!!! I'm gonna be looney as a toon by the end of this garden season!!!
As for being a canning goddess....not sure I'd go that far...lol...but thank you. DH does help, so that makes a huge difference.

Right now, our biggest producers are the corn, tomatoes and peppers. The squash really didn't do well this year..unless it's going to come in really late and surprise us (I really hope it doesn't!!!) I did get a few pints of squash pickles made, so I'm happy with that.
The melons aren't doing well, either. At least not at the moment. Getting a dab of okra.
Just have to see how it all goes. The tomatoes we're getting are HUGE! A slice from the middle is larger than a hamburger bun is around!!! You only need one slice on a burger or sandwich, they're so big.

Seriously things are running late everywhere. When we left Mom and Dads they were just getting the sweetcorn and tomatoes in ...and up here the Huckleberries and Cherries are about 3 weeks late! emoticon
