Quick Meade for a Warm Beltane


A Gallon of Red Wine
Dried Lavender
Three oak leaves
Chamomile
two red rose
1 to 2 Cups of Honey

Place Lavender and Chamomile in a cheese cloth, Pour wine in a big pot and get to a rolling boil put herbs in and then tear oak leaves and roses and drop them in the pot and then pour the honey in. Let Boil for ten minutes and then let cool

After it has cooled remove herb satchel and roses and oak leaves

Pour back into the Bottle and let it get empowered in the sun before circle

The real stuff takes a month to brew and a couple months to age. In a one gallon glass carbouy (cranberry juice cocktail bottle) add 3 pints of raw honey. (You want a few antennae and stingers in there to provide protein for the yeast so don't get too hyper about straining it, just get any wax and larvae out)

Top off the jar with 1-2 inches airspace with boiled water. Any spices or herbs should be added to the boil to sterilize them. Fit an airlock to it, or a lid and allow it to come to cellar temperature. Add a packet of champaign yeast and refit the air lock. It will take the yeast about a month to eat the bottom layer of honey, once it is all gone, allow it to rest for a week or so until the yeast fall and settle out, then you can decant it and bottle, like you would for beer and let it age a month or three.


Also chamomille should be avoided if you have a bad ragweed allergy since it is in the same family
