Winter cooking


For the past few weeks, almost every meal that we have eaten at home has been locally grown and organic. It's been wonderful. I've never been able to grow all of my own vegetables, but now I know what it would be like if I did. It's been very inspiring to get the garden planted and expand it to the point where we do grow all the veggies. I think I could eat seasonally very easily. It feels right!

This week, I made a butternut squash mixture to go on top of couscous, sweet potato hash browns, lots of fresh squeezed orange juice and tons of broccoli and other winter greens. We are also still enjoying the last of our pickled okra. I can't wait until the harvest this year so I can make some more - I didn't make nearly enough!

sounds VERY good, Texas!!

I do enjoy the goodies from our garden. I have more green beans canned right now than I know what to do with lol. I JUST finished off some that were canned in 2005...am working on some from 2006 now. Don't think I'm going to do a lot of beans this year....lol.

Want to do some more cabbage, corn, bell and hot peppers, tomatoes and that kind of thing.....oh..and peas! I need a LOT more peas than what we've been getting.

Good luck getting things up and running to your satisfaction. Gardens are wonderful things to have!

Still didn't get the planting done yesterday, but it'll be soon. It's funny what you think you need to plant and what you end up eating. It takes a lot of planning to not end up with 3 years worth of canned beans! I always run out though since I've never had a really big garden. Can't wait until I do!

Last night I made some more wonderful things. I always think I hate Brussel sprouts because my grandmother used to cook them into a bitter gooey slop when I was a kid. But I've had some WONDERFUL dishes in the past few years with them in it. I've tried once...and failed miserably! But last night I tried again with some of the local organic ones we got delivered. I just cooked them up in some butter and added salt. Yum yum!

I also used to hate sweet potatoes because the only way I ever had them was when my grandmother made them for holidays and put brown sugar and marshmallows in them. I'm not a fan of sweets so I always couldn't stand it. I just started eating them again a few years ago. I can't believe I wasted my whole life avoiding sweet potatoes! They are SOOO good! And we are getting tons in the delivery right now. If I don't watch out, my skin might start turning orange!

Oh, that's so good to hear.

I love Brussel sprouts. I cook them lightly, with butter, salt and some nutmeg. Yummm!

And I only learned to appreciate sweet potatos recently (they are not grown here a lot, and we can usually only get smallish ones). I love them grilled with just a touch of butter and a bit of salt.

Yes, I noticed a pattern there. I don't even eat that much butter, honest.

Actually, I found a vegetable oil with butter aroma. Healthy and yummy, so there. emoticon

I adore sweet potatoes. I like them mashed, with a little butter and milk, like regular mashed potatoes, and just a hint of brown sugar!! Not much tho.
I'm not a huge fan of brussles sprouts. I'll eat them every once in a while, because I do like cabbage, and brussles sprouts are a lot like cabbage (I think of them as baby cabbages lol). I like them steamed with butter and a dash of garlic salt.

Texas Road House, steak house, serves baked sweet potatoes, and you can get them with butter and a caramel drizzle. SOO good, but VERY sweet lol.

Brussel sprouts are a kind of cabbage, just one kind where the actual leaf sprouts form the part we eat (just like broccoli, cauliflower, "real" cabbage, kohlrabi, and kale).

While reading Mother Earth News last night, my boyfriend saw a picture of a brussel sprouts plant. He couldn't believe it! I guess if you've never seen one before, they do look pretty funny. It is quite a strange growth habit! I wished I had asked him what he thought it looked like before he saw the picture. Sometimes we just don't think about where our food comes from!
