DH and our landlord have actually been talking about getting some laying chickens. IF that ever happens, I may see about making some mayo. I'm not a huge mayonnaise person (I prefer mustard), but love it on chicken/turkey/ham sandwiches, and I do like a good potato salad and mashed potatoes (I put mayo in mashed potatoes for flavor and substance) I'm like you, Texas...I'd probably experiment with different things in the mayo and get a blend that DH and I really like.
