MMMM Bread
I made up enough dough for my easy homemade bread 2 days ago and froze one dough and made the other. I love homemade bread and I've had success with freezing this dough and then thawing it, letting it rise the final time and baking it. My mom loves it so I'm thinking that when I go back and take care of my mom, I'll carry the recipe and then make up about 4 loaves at a time and freeze 3 of them, so the care givers can just pop one in the oven once a week or so.

Oh, that sounds nice. I haven't found a recipe yet that seems to do all that well with freezing before baking. I just seems to get really dense or something. What kind of bread are you making?

I love homemade bread, and the smell of it baking is one of my favorite smells....but it's just way to hot in the summer to bake.
I've not made any homemade bread since I've been in TN.....bad me!!
I'd like to make some this fall...and I'd be interested in the recipe you're using as well, so that I can make up several batches and freeze some for use at a later date. If you don't mind sharing, that is

I've heard the bread I make called both Peasant's Bread and Amish bread - not sure if it's truly either
Ingredients: In order if using a breadmaker
6 oz warm water
2.5 Tablespoons olive oil
2 Tablespoons sugar
0.5 teaspoon salt
2 cups and 2 Tablespoons flour
1 teaspoon active yeast.
(I use all purpose flour, not bread flour. I've not tried to substitute veg. oil for olive oil yet, but it could work I think.)
I use a breadmaker to make it into dough, then pull it out, knead it and let it rise 1 more time. If doing entirely by hand, let rise twice before baking.
Bake at 350 F for about 25-30 minutes depending on oven.
When I make a double batch a freeze 1/2 of it, I throw it into a ziploc bag after the first rise and beat down.

Thank you, Willow!!! I will definately have to give this a try.
I don't have a bread machine, so it's all done by hand here.
I have a question.....I've not made bread in so long I can't remember....I know you knead it...let it rise and punch it down....let it rise again..but, do you punch it down the second time before putting it into the oven? I honestly don't remember..lol.

Saijen, usually you knead and let it rise in a big ball. Then punch down and knead it again and work it into the final shape - either put it in a loaf pan or just form a roll or braid or whatever you are making. Then let it rise again. Don't punch it down the second time - just stick it in the oven. Yum!
