Chicken Pot Pie Soup


ok..funny name, but I'll explain.

I was going to make chicken pot pie for supper night before last, but the frozen pie crust I intended to use was all cracked and broken. I could have fixed it after it thawed, but we were hungry, so, I chose to take the filling ingredients and make soup.

What I use for my pot pie filling:
2 cans of cream of chicken soup, undiluted
2 cans of mixed veggies, drained
3-4 boneless/skinless chicken breasts cubed and boiled
salt and pepper to taste.

I mix all of that and put it into the crust, put a top crust on and bake it.

Well, for the soup, I used all the same things, but just a bit differently.

4 boneless/skinless chicken breasts cubed and cooked
1 can of mixed veggies with liquid; 1 can of mixed veggies drained
1 can of cream of chicken soup, undiluted; 1 can of cream of chicken soup with a can of milk added
Salt, pepper, dill, thyme and celery seed to taste. Heat and eat.

It really turned out good, and it was filling. DH's tummy had no problems with it! That was the best thing of all!!!
