Reaping what we've sown...

The garden has started producing! DH had to pick some squash today. I got 4 pints of squash pickles made. Didn't have enough spices for a double batch, so will have to wait till they get more celery seed.

We put some fresh cucumbers in a salad last night, along with some of our radishes.

Won't be long (a day or 2) before we have to pick and break green beans and get them canned. I think later today, DH is gonna pick some green tomatoes for me to can. If not today, then tomorrow or Friday.

Queeny, sounds like your Dad is getting some goodies, too. I've got some zucchini and yellow squash I've got to do something with. These were picked the day I made pickles. I may just see about canning them. I need some more celery seed....need to make more pickles lol

Well....if you are canning tomatoes or peaches or berries or things like that....they can be quick frozen for quite a while until you either get enough or get TIME to can them.
As those sorts of things sort of 'mush' up anyways... emoticon

Yeah..anything that has any liquid to it tends to get really mushy if it's frozen.

I plan on using my tomato juice recipe for the juice as well as for the spahghetti sauce. It has a really good flavor and I think by spices and seasonings to it, as well as some tomato paste, it will be really good....just something I have to try.

We don't get any berries or peaches..at least not here. I'd have to go buy some, which I'm not totally opposed to lol

Mom usually gets enough tomatoes, green peppers and onions for her Chili sauce....but will buy a crate of peaches and one of apples for canning...she loves peaches and applesauce! emoticon
