2011 canning season has begun!!!
DH picked 3/4 of one row of green beans yesterday and we got them all snapped (broke). Today, I got them washed and ready to be processed. I did 22 quarts today. DH will try to get the rest of that row picked, as well as the other row (just 2 rows) in the morning, and I'll work on getting them broke, and if I have time and my body cooperates, I'll get them washed and ready to process. This is just the first picking. There are a LOT of small beans, too small to pick yet, that will be ready within a week or so. I have a feeling it's going to be a big year for green beans for us!
We had fresh cucumbers and banana peppers with our lunch today....sooo good!
The tomato plants are loaded with green tomatoes. Need to get some of those picked to can for fried green tomatoes later in the year. Eventually, if there are enough ripe tomatoes, I'll be making homemade tomato juice and I am going to attempt to make my own spaghetti sauce this year. Don't want to use the mix you can buy...I want to do it totally from scratch. As I add seasoning and such, I'll write down what I added and how much, so once I get it like I want it, I can write out an exact recipe to use over and over. I will have to buy the tomato paste, but I think that will be OK...LOL.
Won't be long before the corn will need to be picked. Oh..we've already got some squash, too. Zucchini and yellow. I made 4 pints of squash pickles the other day. I would have make more, but didn't have enough celery seed and the store was completly out. Guess I need to buy a couple of containers of it when I can find some!
If this keeps up...gonna be a BUSY summer!!!

We're gonna be eating a LOT of green beans!
DH picked the rest of that one row and about half or a bit more of the second row today, and I think I've got as many beans today as the last batch. If that's the case, I'll have another 20-22 quarts to can tomorrow. Thing is, this is just the first picking!!! We'll have to pick again in about a week to a week and a half. There were a LOT of little beans that weren't ready to be picked yet, so, we won't have a shortage of green beans at our house!
The corn is tassling, so it won't be much longer till it will have to be picked. I've got to get some gallon freezer bags!!
We've been getting cucumbers...we cut some up for supper tonight, and I fixed some of last year's corn on the cob and we did venison burger patties on the grill. I also cooked the one jar of beans that didn't seal yesterday, so that leaves me 21 quarts from yesterday. I'm pooped!! LOL

Ooooh, fresh green beans are so wonderful! I should get some at the farmer's market.
Hope you can manage all that quantity. My mom used to fill a large freezer with beans, and we'd have some all winter. Yummy!
I didn't know you could freeze corn on the cob. Good idea! And zucchini ... yummm, yummm. Too bad one plant usually produces too many already!
I'm so happy your garden is producing.

If you actually "pickle" green beans with the same spices as cucumber pickles....they taste fantastic in a "Bloody Mary" drink...

My beans are only 5 inches high!! We have had NO SUN my garden is so sad my tomato plants are knee high.... no maters this year. :angry:
Everything is wimpy wimpy wimpy ggrrrr :angry:
Glad to hear some folks are getting to can I am jealous!!!! LOL

Lavender, I'm really sorry that your garden isn't doing well. If you were closer, I'd be more than happy to share the workload AND the produce with you!
I canned another 18 quarts yesterday (the reason I didn't post) and had some left over, but not enough to throw out, or to can, so, put them in a pint size ziplock freezer bag and stuck em in the freezer! That way, I can add them to a jar if I need just that much to finish out a quart. Keeps em fresh till I need them. If I don't need them to finish out a jar, then I can add them to a quart that I'm cooking at some point in time.
I'm already sick of green beans!
I'm looking forward to making more tomato juice, and trying my hand and making my own spaghettie sauce. I don't want to use the packs of stuff you get at the store, I want to make it as much from scratch as possible. I will need to get some tomato paste, and possibly some seasonings (since I have no fresh herbs ) I did have, at one time, all kinds of herbs growing, but DH and the landlord mowed them down with the tractor, and when I asked for a different area of the garden be prepped that they would stay out of, although I was assured I'd get it.....it was forgotten about, so, all my herb seeds are still in the refrigerator. Too late to plant them now to do me any good! :angry:

Oh too bad about the herbs...MEN!!!
Try the local farmers market for some nice fresh herbs....you can freeze them till ready to cook down into spaghetti sauce, etc.
