He had a small heritage pig operation in Colorado in the Rockies? I've looked around for him online a few times (I used to read his girlfriend's blog - Rendering Lard - but it went defunct as did his website). He raised tamworths - the pig I want to raise one day. We try now to eat as much fresh veggis and as 'natural' meat as we can get. Very little starch passes by us.....mostly because it really packs on the weight. Fat can always be cut off prior to cooking so that your meat isn't laying in all that as it cooks..so it doesn't absorb the fat. We love our food, and unfortunately, DH grew up on the fatty country cooking, and while I grew up with a bit more refined meals, my first husband also grew up with country cookin...lots of fats and starches so kind of got into cooking that way. It's one reason I've gained the weight I have....and meds have made the weight gain worse...so, here I am. I'm hoping we can eat better this year so we can both lose some. I think free range, home grown meats are the best....no chemicals and crap. Just would be nice if we could find some good fresh meats. I have a set of Time Life 'Foods of the World' Cookbooks published in the late 60s/early 70s: Even those these were written 40 years ago, they are already talking about the difference between the modern pig and the ones raised when certain cuisines were being developed. Pigs were 'slimmed down' when Americans became fat-phobic. I also read an article in Cooks Illustrated about tasting the difference between heritage breeds and modern breeds. All of their taste testers preferred the modern breeds - not because of taste but because they could see the fat/marbling/grease of the heritage breeds. I think one might have even admitted it had more flavor but it made him uncomfortable knowing it came from fat. Kinda sad! I truly believe that fat is not the enemy in our diet. It's the lack of REAL FOOD.
