I have no idea it was possible to manipulate a normal fridge into doing this. It's very neat, at any rate. And it looks big enough for many cheeses.

How many goats do you have by now? And how much milk does each one produce?

We have WAY TOO many goats. emoticon But 5 were bred this year (we've had 4-6 in milk every year). At peak production, we have several goats that will produce about 1.75 gallons (6.5 liters) a day. That's a lot! Most produce closer to one gallon. And remember that the first 4 months, we are still feeding baby goats and they consume about half of what the dams produce. Still, we typically expect about 20-30 extra gallons (75-115 liters) a week. We sell about half of that and drink another couple of gallons but we still have plenty left over to make cheese!

That is a lot of milk indeed! Glad you can turn the surplus into cheese. I bet that's why people continued making it after discovering how. It's a way of storing milk for the winter.

ahhh, goat cheese. I LOVE it. Wish I lived near you. We've not taken the plunge with any animals bigger than chickens. Still, I often think about how nice it would be to have goat milk, cheese, even raw cow milk...if I could ever be OK with really being tied down emoticon

Cat, we would love to have a few goats as well, but not sure about the 'being tied down' issue, either. It's hard enough to get people to feed the cat and canines when we want to take off for a week of camping.

Have you thought about looking in your area to see if there is anyone who would be willing to sell you some goat milk, or fresh cow's milk?

I just looked at the webpage for the cheese company that grew out of the community that gave the cheese classes I took. They've redone the webpage and it's great...and they have pictures of their brand new cheese cave. I want one!!!

Of course, with room for 3,000 wheels of cheese, this is HUGE. Amazing. I totally understand that you're jealous.
