Meatballs


I made this recipe tonight, and it will get made again, but with some revisions. I'll post what I would change at the end of the recipe. For us, we will get at least 2 meals from this one recipe. I had enough left over to freeze for another meal.

2lbs ground meat
3 eggs
1cup bread crumbs
1pk dry onion soup mix

1cup brown sugar
1can ([sign in to see URL])kraut
1can ([sign in to see URL]) cranberry sauce
12oz bbq sauce

Mix first 4 ingredients well. Form into 1" meatballs and place into 9x13 casserole dish or pan.

Mix remaining ingredients and spoon over meatballs

Bake 25-30 minutes, uncovered, at 450 degrees

I used whole cranberry sauce, but you can use the jellied kind of you want.

What I will change for the next [sign in to see URL] maybe 1/2 cup of brown sugar and 8-10oz of bbq sauce. The sauce is rather rich and a bit too sweet for me, so I'll adjust it. We really liked these though, and they will get made again, for sure. This would also be a nice dish to take to a pot-luck type dinner. I think it took me a total of about an hour, if that, from prep to eating. What takes so long is forming all the meatballs. I made mine a bit larger than 1", so I cooked mine for 30 minutes, just to be sure they got totally cooked. YUMMY stuff!!

Wow, that sauce sounds intense! I bet it was way too sweet! Interesting combination of flavors though. We loved the Italian meatballs we made but I think they probably have to much of their own flavor (parsley, lemon, nutmeg) to make it work with a sauce like that. Hubby loves meatballs (something I didn't know until starting to eat meat) so we may give this a [sign in to see URL] your sauce changes I think!

Texas, yeah, the sauce was extremely intense. Good, but too much of a good thing. I almost think just the kraut and cranberry sauce would be good with just a tad of bbq [sign in to see URL] by tad, I mean maybe a cup, and leave the brown sugar out all together. Just something you may have to play around with till you get the sauce the way you like it.
The meatballs themselves had a nice flavor from the breadcrumbs and onion soup mix, but they would definitely need some kind of sauce.

I think even the sauce I make for my No Fuss Chicken would be good on [sign in to see URL] bottle of Kraft Toasted Sesame salad dressing and about a half cup to a cup of apricot/pineapple jelly or orange marmalade, would be good on [sign in to see URL] even the dressing and the cranberry sauce would be good.

I'm forever revising recipes like [sign in to see URL]
