Man, that all looks SO good!!! Even reading about it made my mouth water...LOL.

The rice sounds heavenly! I'd LOVE the rice recipe, above all the rest. As for doing rice in the oven, I do that everytime I fix chicken and yellow rice. I put my rice in a 9x3 casserole dish, along with the amount of water stated on the package, put my chicken breasts on top of that, foil over all (to keep in the juices), and bake, usually at about 350-375 for close to an hour. SO good...don't put anything else in it. The saffron kind of infuses the breasts, and the broth from the chicken infuses the rice. I usually fix peas or green beans to go with it, but I bet the rice above would be awesome done this way!! (hm...another recipe for me to play around with...LOL) And...thank you in advance for the rice recipe emoticon emoticon

That looks impressive! I'm glad your brother is pitching in, it does sound like a lot of work.

And you've made me want to try rice with coconut milk!
