Smoothie recipes
Now that I have a Vitamix, we are making smoothies every morning (I'm sure we'll back off from that soon, but so far we love it!). I'm mostly just making stuff up and I haven't come up with a set of excellent recipes yet, but I'm working on it!
I do, however, have a favorite recipe that can be made in any blender (the vitamix is almost necessary for blending hearty greens like kale). I've been making this with my crappy immersion blender for years. Love it! It does require a juicer, or maybe you can buy carrot juice and add some ginger to it.

Bunny Spice supposed to serve 2 but we almost always freeze some leftovers
2 cups chopped, frozen bananas (about 3 medium ones)
1 cup "milk" (you can use almond milk, soy milk, or cow/goat milk - I usually use cow milk, but when I don't I prefer the sweetened versions of the other milks just for a bit more flavor)
1 cup carrot-ginger juice (run a thumb of ginger through your juicer with the carrots)
pinch of cinnamon
Just blend them all together and enjoy! Willa calls this "ice cream" when we have it for breakfast!
Oh, and during one of my 'pagan cooking' phases, I was looking up food correspondences and nearly everything in this smoothie relates to love and luck. So drink it with a purpose!

My favorite is yogurt, frozen berries, and a banana in the blender. Sometimes a little honey and some flax seed. Doesn't matter what kind of berries, whatever is on hand. Have used blueberry, blackberry (YUM) & strawberry.

Here are my current two favorites that I make on a regular basis (I still think Bunny Spice is top of the list but I hate getting the juicer out all the time...plus carrot season in almost over!).

Double Green Smoothie one big or two small servings
1 cup juice - apple juice is 'neutral' while grape juice provides a wonderful depth of flavor
1 kiwi. peeled
1 mango, peeled and seed removed
2 cups spinach
Blend until smooth.

Coffee Smoothie one big or two small servings
1 cup milk
1 cup frozen strong sweetened coffee
"extras"
To make the coffee I make it 50% stronger. So put in water for 8 put coffee grindings for 12 servings. Then add the sugar while the coffee is still hot (whatever amount you normally use). Pour the cooled coffee into a 9x13 casserole and put it in the freezer. Every 30 minutes for 2 hours, scrape the coffee crystals with a fork so you end up with a fluffy mixture at the end which you can put in a freezer container. When measure the frozen coffee later, I pour the milk in the blender first (which has cup markings on it) and then fill with the coffee until it reaches the next mark.
The extras I like are:
Frozen banana - makes an extra thick smoothie so you might want to add some more milk
Hot cocoa powder (I use 1 tbsp of the stuff we have - you are supposed to use 4 tbsp per cup, but I think 1 does the trick for the whole smoothie)
1 tsp vanilla and a pinch of cinnamon
Yummy!

Now those sound really good....both of them. The ONLY problem I would have would be freezing the coffee. The way my freezer is made, I have nowhere to put a 9x13 casserole dish. I have a bottom freezer, with 2 drawers, but they are both so full of stuff, I'd not be able to put the dish..LOL. They really do sound good tho. The blender I have would easily do both of those.

Since the vitamix is great at crushing ice, I can just pour the coffee into ice cube trays. You said your's wasn't so good at that though...
If you do the one with a frozen banana it in, you can probably get away with having the coffee just cooled in the fridge. That's the way I made the first few but I wanted a THICK, drink with a straw one so I switched to freezing it. Then I found you could leave out the banana if you used frozen coffee and still get a slushy drink (I ran out of bananas!).

Yeah, even an ice tray wouldn't work real well....but..maybe if I did a small dish, I could put it in the ice thing in the freezer. My fridge has 2 ice makers...one in the fridge door and one in the freezer...I have the one in the freezer turned off...so a small plastic container may work there.
