Love the color of those muffins!!!! I love beets, in just about any way they can be fixed. I may have to try this recipe!

I still love one of the breakfasts from the Paleo Solution book...

I take a half pound of pork sausage and brown it, after sauteeing some onions in 2 tsp of olive oil. Add about 1/4 cup of salsa after meat has browned, then add as much baby spinach as you want. Cook till the spinach cooks down some. Add whipped eggs and cook, then, if desired, add some shredded cheese. Once on the plate, if more salsa is [sign in to see URL] what you want. Dh and I both LOVE this breakfast! Very tasty, and sticks with you.

And I honestly can't really believe you're roasting radiccio. I must try that once. Do you use a whole small head?



I'm not really familiar with radicchio - this is the first year we've grown it. It's really REALLY bitter, I think because of our heat. I had read that roasting it was a way to mellow that. It did work, but was still bitter (I liked it but those that don't like bitter greens won't!). I just quartered the whole head, added some oil and seasoning and roasted in the oven. I did a recipe for it on the website:

That's a quick and easy recipe! I might try it, even though I'm not too fond of bitter veggies. (But I liked chicory.)
