Lunch


Since I started the Paleo diet this week I have been trying to come up with things to eat. The other day I took a couple of those foil packs of salmon, added some chopped onion and bell pepper, a big spoon of mayo, a little black pepper and some hot sauce, mixed it up and laid a spoon full out on some red leaf lettuce leaves, rolled them up and enjoyed.

My wife and daughter thinks it was gross because they don't like salmon but that just means more for me unless my son gets to it.

That's it. Just wanted to share and ask if anyone has any simple little meals like this to please share. This diet is a lot harder when I sit and watch my family eating everything that I am not.

I don't have any good food ideas, sadly. German culture uses lots of bread, and I find it extremely hard to ditch all of it. I changed my breakfast to some fruit, yoghurt and almonds, and that feels good.

Bro.. that sounds really good. We love salmon. If you have the fully cooked canned salmon, you can make something like a tuna salad with it. I prefer tuna for that, but you may enjoy the salmon that way.

You can also make some tuna salad, and stuff a tomato with it. For my tuna salad, I use one can of tuna, boil and chop 2 eggs, add some dill pickle relish, salt, pepper, about a Tablespoon of mayo, a teaspoon of mustard, and I either eat it plain, or stuff a tomato. For the tomato, core it, then just cut it enough into [sign in to see URL] it's still in one piece, but you can put the tuna salad down on top of those quarters. Makes a really good lunch. For dessert, you can have some nuts, ...if you are doing dairy at [sign in to see URL] some crushed nuts in some yogurt, or even some sugar free pudding. You do not have to totally purge yourself from all the goodies. If you do that, you will fail. Like I told you in the other [sign in to see URL] were even doing ice cream, almost every night, and we were still losing weight like crazy.

Another idea. Grill you up several hamburger patties, and freeze what you don't need. We usually will eat 2 patties. I will add some spices/herbs to the raw meat, or something I'll add a pack of dry onion soup mix and some BBQ or steak sauce. Patty it out (1 pound will make 4 patties). Freeze what you won't eat, then for a quick meal on another day, thaw, heat, and eat!

If you like [sign in to see URL] a spaghetti squash, the insides look like spaghetti [sign in to see URL] cook those just like you would noodles, pour your sauce over them after they're cooked and [sign in to see URL] you have [sign in to see URL] it's really rather good! Any left [sign in to see URL] for a meal on another day. (and you can use meat in your sauce, just like you would normally)
You can do any kind of noodles, but you need to make sure they are like Kelp noodles and have no wheat (or any other type of flour) in them. Not sure where you could get those up [sign in to see URL] you have an Earth Faire, you could probably find them [sign in to see URL] any good health food place.

[sign in to see URL] in a blue moon, if you really want something, eat it. Just make sure do it in moderation, and your next meal you're back on your diet. And, do NOT beat yourself up, if you DO eat something that's not Paleo. It's OK to do that now and then, to break the monotony, which actually will help you stay on your diet!

I know it's hard to do this, when everyone else is eating 'normally'...the thing is, you're also eating 'normally' you're just choosing to leave off some things. There truly is nothing you're eating, that they can't also eat, unless they just really dislike it.

Firle, thanks for the link. I found a lot on there that I plan to make.

Saijen, with the hamburger patties, I like to mix a packet of taco seasoning with the raw hamburger and then make the patties and then cover them with your favorite salsa and have some avocado on the side.

I do need to figure out some lunches to take to the college. I had a couple of pork chops today and when I got home my blood sugars were 52. My wife was a tad bit upset.

Keep some of the dark chocolate handy for your blood sugar. Do you have a meter you carry with you to keep a check on it while you're away from home? If not, you need to think about getting a second one.

An easy thing to take with you to the college is salads. Make sure you add some [sign in to see URL] will help some with the carb [sign in to see URL], it may be that you need to do some carbs now and then. Just don't do the carbs that don't stick around, like bread or chips. You may need a carb that will stay with you a bit longer. Cut some corn off the cob and add to your salad. It's not a lot of carbs, but will help with the low blood sugar issue some. And for heaven's [sign in to see URL] some glucose tablets on hand!!! They're not that expensive at Walmart, and they will help! If you were closer, I'd work with you some on the meals and finding what will work to help you not get too low on your sugar levels.
I did a no-no the other day and ate too many grapes, and caused mine to spike. It was [sign in to see URL]'s not been that high in quite a while. I felt like crap. Actually, that was yesterday, and I've been a bit headachy today because of it.

You'll find your balance with this diet. It may take a bit, but I'm sure you'll do fine. Once you find that balance, you'll realize, one day, that you feel pretty good. It's gradual, so it kinda sneaks up on ya. I'll be SO happy to get back on track with this, but I'm not niave enough to think I can manage the full blown diet while we're [sign in to see URL] when there will be 2 other people with us, who just adore their starchy (and other bad for you) stuff. Little Debbie cakes, potato chips, potatoes, soup beans (pintos, or navy, or [sign in to see URL] dried bean)..and bread!! I'm going to really have to put my foot down on some things when it comes to the food.

DO NOT lose hope!!! You CAN do this, but it's OK if you need to do some carbs now and then. Once in a while, if you need to, do some pasta for [sign in to see URL] watch how much. That's one of those quick carb things, that can push your sugar up, then you [sign in to see URL] be careful. Do a 'mostly Paleo' diet, and add in as your body feels the need to. emoticon Just do be careful and keep a close eye on your sugar levels!!!
