Earliest Cheese Making

Since some of you here are making cheese, I wanted to link this article about the earliest cheese-making in the world - so far.

]Prehistoric Farmers Made Cheese

Although I believe that the picture doesn't show the right kind of cheese ... it's still rather amazing.

[sign in to see URL]!!!! I wouldn't have thought about cheese not affecting someone who is lactose intolerant. Guess that's changed some over the decades, huh?

Actually, many cheeses have really low levels of lactose or are even lactose-free.

Also, most people are born lactose-tolerant. After all, we need to be able to digest mom's milk. emoticon Most people lose the ability when they stop consuming milk as teenagers or later. It takes about two years of not having milk or many milk-products to lose the ability.

I also think that lactose-intolerance is a bit of a hype. Stomach and digestion problems are one indicator of stress - and who isn't stressed in these times? It's eassier to blame milk, rather than a life-style or the expectations of a whole nation.

I have to also wonder if some of it may not be the lactose, but perhaps something else that causes the problem and it gets blamed on lactose.
My oldest has to take a pill before eating pizza with cheese and such, but can eat other dairy without problems. Not sure what things set her off and which ones don't, but I know she has to take a pill before eating pizza if it has [sign in to see URL] weird!
