Muladzh, I've been wanting to try canned potatoes but my pressure canner went kaput last year! So far, I've not found the need to really replace it since we have a big freezer.

The idea of a pressure canner going kaput is somehow terrifying. We have a small stainless steel one, we need to get a bigger one, to do more than four jars at a time.. We don't usually use anything aluminium, as it has bad effects on people, but I reckon a aluminium canner won't harm anything, as the insides of the canner don't get into the insides of the jars.. or so I believe.

The flavour of the canned potatoes is different, but wonderful.

Ah, it's didn't blow up! That would be terrible! The gasket broke down and there is no manufacturing mark on it (it was handed down to me from my mom) and I can't find a replacement. I've taken it to several places. I never liked it much - it didn't have a gauge, just a little weight that wobbled around.

I've heard they are 'crisp' when canned!

They aren't really crisp, but not soft, they need chewing.. I rather like them, particularly with canned beef.
