home made coconut ice-cream


Last night Froggy made coconut ice-cream, using three cans of coconut milk - next time she will be using home made coconut milk, but this time was an experiment.

Simple recipe - three cans of Coconut milk, sweetener, gelatine and time..

Take one can of coconut milk and condense it.. reduce by half

Whip the other two cans of milk..

Take the sweetner, and add to gelatin, and mix. We used coconut palm sugar, not so sweet and leaves teeth alone. It does not use the same trees as coconut harvester for oil, unlike the viral objections to it, probably made by sugar corporations..

Add the sweetener gelatin mix to the condensed milk.. add whole lot to the whipped milk, and put into a freezer container. Freeze for six hours,then eat.. IT is delicious, without the vaguely chemical flavour of the commercial coconut ice-creams.

Next time we will use rather less sweetener - the recipe calls for 3/4 cup, we used half, we will use a third next time. We will also use home made coconut milk, without the guar gum additives most come with.

IT will be easier when we have a house kitchen - this RV has limited kitchen space.

It works well with Stevia, and won't be as brown.. We tried it with the coconut palm sugar as a first time using it. We made some with that and a small batch with Stevia, our favorite sweetener. I can't show a picture of the paler ice-cream with the stevia - it didn't survive long enough to be photographed. lol. We are going to try it with fruit juice to see what that is like..

Froggy reckons it is more of a frozen mousse rather than a true ice-cream. Whatever it is, I like it a lot.. emoticon

She has a few more recipes that we will try out in a larger kitchen. emoticon

Coconut milk is Easy to make..

Get shredded coconut, place in a blender with hot water, and blend for a couple of minutes, then strain it through cheese cloth..

2.5 oz shredded coconut, to 1 1/2 cups of simmered water. (70 grams coconut to 355 cc simmered water)

This makes a very good rich milk like liquid that is coconut milk.. We use organic coconut from a trusted supplier, and distilled water..

All you need is a blender and cheesecloth. We use distilled water because we don't like what the US puts in water, but it isn't necessary.

Froggy is going to make some coconut custard ice cream soon. I will post that one too.

Oh, that sounds delicious! I don't particularly like ice cream, I think it's to hard/cold, if that makes any sense.
So a frozen mousse rather than a true ice-cream, would be awesome! emoticon

Queeny, you need homemade ice cream! When I get store bought, I always have to let it melt a little before eating it. Homemade is always runnier and sooo good.

I've only had commercial coconut ice cream and have not cared for it. It does have that chemical taste you are talking about muldazh. I may have to try homemade sometime too!

Ohh that sounds really good!!! Too bad I wasn't there to help taste test! heehee......


She'll have to give me the full recipe when I see y'all again. We love a good ice cream, and most of us like the taste of anything coconut!!
